It is here!

Summer i over! The sunshine of summer will probably stay with us until lay September; and probably come to visit us in between our "fall/winter". You see in Texas, especially where I live...the sunshine is great, the summer's are long and are winters are hardly harsh. Regardless, I love it! The semester of fall 2012 is among us; classes start tommorow and I tried to make a bet with my husband in regards to how long it will be before I have an emotional breakdown...My husband refused to answer and smirked and told me that he hoped NOT! ahhh, i love this man, I appreciate quite deeply his enthusiasm; I on the other hand I am doubting my capability to handle the upcoming stress. I am nervous about not being able to continue exercising granted the fact that I have been kicking ass the last month or so... I have an office that I never use; hence this picture. I love the kitchen table because of its close proximity to the fridge. Note to self: keep plenty of salads around. Enjoyed having some culinary adventures this weekend...It is important for me to cook at home because not only do I know what goes in my food; but it also helps me keep track of my nutrition intake (my hubby too)...Made some smokey tasting turkey burgers, which I enjoyed flavoring with pickled roasted red peppers (discovered them when I went grocery shopping on saturday night and they were on a good price tag)...note to self: continue to buy these; they are great on salads too! For dinner tonight, I made some chicken breast and turkey sausage style jumbalaya, whole grain rice, and veggies (peas and corn, as per my hubby's request)... We love peas and corn, but peas are heavy in starch so we try to avoid them; and well corn is really not the greatest vegetable either! But oh man, was it heavenly!!! For dessert, we happily enjoyed 1 tbsp of nutella and low cal/low carb vanilla yogurt mixed with fruit: peaches, strawberries, and oranges It doesn't look that great, but it sure curbs the craving for sweet after our main course! Hoping for a good school semester! P.S. I got orange and chocolate on my mind for an innovative dessert; it really IS a great combo!
