I embarked on an adventure in my own kitchen!

So as you may have noticed, I am a food guru! I breathe it, read about, dream about it, talk about it way too much and I simply just love food! I love to try new foods and especially experiment in the kitchen. For the last couple of months, I have been veggying out monday through Friday and enjoying the freedom that meatless weekdays has brought upon my life. Not only am I saving calories, I am also increasing my fiber intake and helping to reduce the risk of colon cancer, and or other cancers that have been linked to red meat products. I absolutely enjoy making traditional foods into vegeterian dishes and seeing the surprise in people's faces when they learn there is NO meat in what they are licking their fingers over. One of these individuals is my husband, who cringes at the mere thought and talk of "meatless, soy, and vegeterian". I opted to make "picadillo" and its sides. For those that aren't familiar with picadillo, picadillo is a traditional mexican/cuban dish composed of ground beef, potato, and spices. It is delicious, but it can get pretty hefty with all the added grease from the meat and sauces. I started my base with this meatless product that you can easily find in the frozen isle. It adapts flavor very easily to anything you add to it. The importance to making delicious meatless meals is the spice usage and the very traditional ingredients to alot of mexican dishes: tomato, onion, garlic, and jalapeno. I always gotta have my cumin and my bullion spices. They are key in flavor! Careful, just a little goes a long way. Cumin is very powerful and you definetly do not want to ruin your dish by overpowering it. Plus, most spices have quite a bit of sodium and too much of something is not suiting either... My rice is completely whole grain, but does not mean it has to be flavorless and gritty! Healthy Food does not have to be boring!!! Finally, I was grateful that my experiment was a success and I had one happy camper (hubs) enjoying every tibit on his plate. ;) I kept myself busy this morning and it reassured my inner goddess that I am and can indeed be a Kitchen Goddess like Giada! hahahaha. Plus, when I cook my mind seems to travel somewhere else. A place where I am free to be, and free of all worry; and I love it there! P.S. Apologize to that soy for hurting its feelings!
